Topped with granulated sugar and sliced almonds, this Scandinavian Almond Skillet Cake is full of that distinct almondy flavor. A beautiful addition to any dessert table or cookie tray. I will always picture my relatives sitting around enjoying this Almond Skillet Cake after dinner, each with a steaming cup of coffee in hand 😉

I have a strong Norwegian heritage on my mom’s side of the family, and Christmas Eve has always been a big deal for us. That’s the time of year when we pull out all the Norsk family recipes and bake several Scandinavian Christmas desserts. We make the open-face sandwiches, slice Nokkelost cheese, and enjoy bowls of creamy Julegrud with butter and cinnamon.
Among Scandinavian desserts, cardamom and almond extract are frequently the star flavors. There’s no better way to showcase some of the delicious flavors of Scandinavian baking than with this Scandinavian Almond Skillet Cake.

Ingredients
- 1 1/2 c. granulated sugar
- 2 eggs
- 1 1/2 tsp. pure almond extract
- 1 1/2 c. all-purpose flour
- pinch of salt
- 3/4 c. melted butter

Tips
- It is important to properly prepare your cake pan so that the almond skillet cake will release from the pan easily. I have found success by generously greasing the pan with butter and completely coating the inside with a little bit of flour (shaking out any excess flour). Parchment paper is a great alternative as well (check out these convenient parchment paper rounds).
- An 8×8 square pan can be used in place of a 9″ round cake pan
- For the topping, you can add as many or as few sliced almonds as you prefer. I like to add a lot of almonds for the look and texture, but you can do whatever you like!
Ways to Enjoy Almond Skillet Cake
A hot cup of coffee or black tea is a great compliment to the sweet almondy flavor of Almond Skillet Cake. In my experience, this cake has always been a BIG hit at parties and get-togethers as the almond flavor always appeals to someone in the room.
Especially at evening holiday parties when the lighting is typically dim, the sugar and almond topping on this cake glisten, making it festive and very appealing to those exploring the dessert table 🙂

How to Make Almond Skillet Cake
First, preheat your oven to 350 degrees Fahrenheit.
In a mixing bowl, beat eggs and sugar together until combined. Add in the almond extract, and mix.
Next, Add the flour and salt. Mix well.
Lastly, add the melted butter. Mix the batter until the ingredients are well-incorporated.

Spread the batter into a greased, floured 9-inch round cake pan and smooth with a spatula.

Sprinkle with granulated sugar and sliced almonds.

Bake for 40-50 minutes until the edges are golden brown and a toothpick inserted comes out clean.
Let the cake cool for a while in the pan. When you are ready to remove the cake from the pan, run a knife around the edges to loosen the cake from the pan.
Enjoy with a cup of coffee or tea!

Scandinavian Almond Skillet Cake
Equipment
- 1 9" round cake pan greased and floured OR lined with parchment paper
- 1 mixing bowl
- 1 hand mixer with beaters
Ingredients
- 1 1/2 c sugar
- 2 eggs
- 1 1/2 tsp. almond extract
- 1 1/2 c all-purpose flour
- pinch of salt
- 3/4 c butter melted
Topping
- granulated sugar
- handful sliced almonds
Instructions
- Preheat oven to 350 degrees Fahrenheit.
- In a mixing bowl, beat eggs and sugar together until smooth. Add the almond extract and mix.
- Add flour and pinch of salt. Mix.
- Add the melted butter. Beat mixture until all ingredients are combined.
- Spread the batter into a greased, floured 9" round cake pan (or lined with parchment paper). Smooth the top of the batter, and sprinkle with granulated sugar and sliced almonds.
- Bake for 40-50 minutes until the edges are golden brown and a toothpick inserted comes out clean.
- Allow the Almond Skillet Cake to cool in the pan. When ready to remove, insert a knife between the edges of the cake and the pan to help release the cake from the pan.
- Enjoy with a hot cup of coffee or all by itself!
