These Morning Glory Snack Bites are 100% clean and ACTUALLY healthy! Sweetened with honey, and free from oils, these morning glory snack bites are perfect for a quick HEALTHY breakfast, snack, or sweet treat. The “morning glory” flavor combo consists of apple, shredded carrot, shredded coconut, raisins, milled flax, and cinnamon. Super yummy for all ages, and especially great to have on hand for the kiddos!

Despite my high hopes of my toddler happily enjoying all the same vegetables and healthy ingredients that I love, her carb-loving sweet tooth is a force to be reckoned with some days (but let’s be honest…mine is too!). If she even sees a piece of bread (or hears it going in the toaster), she no longer wants her eggs or chicken or whatever else she was eating.
So rather than fighting it, I am on a mission to come up create lightly sweet, nutrient-dense recipes that she can enjoy as a side, snack, or even dessert. She loves these morning glory snack bites along with recipes like Baked Sprouted Oats with Apples and Cranberries and BEST Banana Nut Almond Milk Pancakes.
Since these snack bites are mini muffin size, they are perfect for littles to hold and eat on their own.

Why You’ll Love These Snack Bites
Actually HEALTHY!– Many “energy bites” and “protein balls” contain lots of added sugars and unhealthy oils. But these morning glory snack bites are free of refined sugar and unhealthy oils! The only sweeteners used are unsweetened applesauce and honey.
Real-food ingredients: This recipe contains only real-food ingredients like sprouted rolled oats, applesauce, honey, and milled flax. Nothing artificial here!
Gluten-Free, Dairy-free, Egg-free– Since this recipe uses blended sprouted oats as the flour component, these snack bites are gluten-free! In addition, there are no dairy or egg ingredients in these oat bites, making them the perfect allergy-friendly snack.
Perfect for Babies/Toddlers and Kiddos!– My original reason for creating this recipe was to find a healthy homemade breakfast item/snack/sweet treat that I could give my toddler and feel 100% good about. She loves these snack bites at the same level as dessert, and I can give these to her often without feeling any guilt! That’s a win for me!

Tips:
- For littles, try turning these into cookies!– My daughter’s face LIGHTS UP whenever I pull out one of these morning glory “cookies”…because to her, it’s a real cookie! She’ll stick out her cute little hands to receive her yummy treat, and I can soak in that adorableee moment without any guilt because I know this is 100% good for her body.
- TO MAKE COOKIES: place heaping spoonfuls of the batter on a greased cookie sheet (or lined with parchment paper). Use the back of the spoon to flatten the batter into cookie shapes. Bake for 15-20 minutes, then let cool for a few minutes on the cookie sheet before transferring them to the cooling rack. These cookies are soft, so store in a hard container in the refrigerator to keep fresh.
- When you combine the oats, flax and applesauce, let them sit together for 1-2 minutes to allow the applesauce to hydrate the oats so that they are more soft and supple.
- GREASE your mini muffin pan with butter (or a healthy oil of your choice like coconut oil) so that the outside of the oat snack bites turn a bit golden on the sides.
- Store these morning glory snack bites in the refrigerator to keep fresh for up to 1 1/2 weeks!

Ingredients
- 1 1/4 c. uncooked Organic Sprouted Rolled Oats (You’ll blend 1 cup of this amount into flour)
- Make sure to use rolled oats…not instant oats!
- 1/4 c. Organic Milled flax seed
- 1 tsp. Cinnamon
- 1/4 tsp. Sea salt
- 1/2 tsp baking soda
- 1 c. Unsweetened applesauce
- 1 tsp vanilla extract
- 2 tbsp. Honey
- 1/4 c. finely shredded carrot
- I use this medium grater/microplane
- 1/4 c. Shredded Coconut (unsweetened)
- 1/3 c. Raisins

Other Flavor Combinations to Try:
This snack bite recipe can be easily converted into other flavor combinations. Customize with different combos of dried fruits, seeds, and mix-ins. Here are a few ideas of other ingredients you could use:
In place of applesauce:
- mashed banana
- any other fruit puree (as long as it’s unsweetened!)
Seeds:
- Whole flax seeds
- Chia seeds
- Chopped pumpkin seeds
- Sunflower seeds
- Hemp seeds
Dried fruits :
- Unsweetened dried cranberries
- Unsweetened dried papaya, chopped
- Unsweetened dried mango, chopped
- Dates, pitted and chopped
- Figs, chopped
Other Mix-ins:
- Dark chocolate or cacao nibs (just don’t give these to toddlers/babies!)

Ways to Enjoy Morning Glory Snack Bites
These morning glory snack bites are a healthy and delicious homemade snack to have on hand. Make a batch or two and store in the fridge or freezer. I also like to make these before road trips as a healthy road trip snack!
Grab a couple of these for a healthy, quick breakfast or snack throughout the day. Enjoy them cold out of the fridge or warm them up in the microwave.

How to Make Morning Glory Snack Bites
Preheat your oven to 350 degrees Fahrenheit. Grease a mini muffin pan with butter (or a healthy grease of your choice such as coconut oil)
In a blender, blend up 1 c. of the sprouted rolled oats into flour.

Add this oat flour to a mixing bowl along with the remaining 1/4 c. of oats. Mix in the milled flax seed, cinnamon, sea salt, and baking soda until thoroughly incorporated.

Add the applesauce, honey, and vanilla extract to the dry ingredients and mix well. Let this batter stand for a minute or 2 to allow the applesauce to hydrate the oats.
Next, stir in the shredded carrot, coconut, and raisins.
Fill the wells of the mini muffin pan to the top of the wells (these will rise a little, but not a ton).

Bake for 15 minutes until lightly brown on top. Let cool in the muffin pan for a few minutes before transferring to a cooling rack. Once cool, store your morning glory snack bites in the refrigerator for up to 1.5 weeks for a healthy easy snack!

Morning Glory Snack Bites (Oil and Refined Sugar Free)
Equipment
- mixing bowl
- mini muffin pan
- blender or food processor
Ingredients
- 1 1/4 c. Rolled oats uncooked
- 1/4 c. Milled flax seed
- 1 tsp. Cinnamon
- 1/4 tsp. Sea salt
- 1/2 tsp baking soda
- 1 c. Unsweetened applesauce
- 1 tsp vanilla extract
- 2 tbsp. Honey
- 1/4 c. Shredded carrot
- 1/4 c. Unsweetened shredded coconut
- 1/3 c. Raisins
Instructions
- Blend 1 c. of the oats into flour. In a mixing bowl, combine the oat flour, remaining 1/4 c. of oats, milled flax, cinnamon, salt, and baking soda.
- Add the applesauce, honey, and vanilla to the oat mixture. Mix well. Let this batter sit for a few minutes to hydrate.
- After a few minutes, stir in the shredded carrot, coconut, and raisins.
- Spoon the batter into the wells of a greased mini muffin pan (all the way to the top). Bake for 15 minutes at 350 degrees F.
- Let cool. Enjoy! (Store in the refrigerator to keep fresh up to 1.5 weeks).
