Scandinavian Almond Skillet Cake

Equipment

  • 1 9" round cake pan greased and floured OR lined with parchment paper
  • 1 mixing bowl
  • 1 hand mixer with beaters

Ingredients

  • 1 1/2 c sugar
  • 2 eggs
  • 1 1/2 tsp. almond extract
  • 1 1/2 c all-purpose flour
  • pinch of salt
  • 3/4 c butter melted

Topping

  • granulated sugar
  • handful sliced almonds

Instructions

  • Preheat oven to 350 degrees Fahrenheit.
  • In a mixing bowl, beat eggs and sugar together until smooth. Add the almond extract and mix.
  • Add flour and pinch of salt. Mix.
  • Add the melted butter. Beat mixture until all ingredients are combined.
  • Spread the batter into a greased, floured 9" round cake pan (or lined with parchment paper). Smooth the top of the batter, and sprinkle with granulated sugar and sliced almonds.
  • Bake for 40-50 minutes until the edges are golden brown and a toothpick inserted comes out clean.
  • Allow the Almond Skillet Cake to cool in the pan. When ready to remove, insert a knife between the edges of the cake and the pan to help release the cake from the pan.
  • Enjoy with a hot cup of coffee or all by itself!
