No-Cook Strawberry Compote Recipe

This strawberry compote recipe is a juicy, sweet, and delicious topping for pancakes, ice cream, and of course, strawberry shortcake! It’s super easy and only requires fresh strawberries and a sprinkle of sugar!

My dad taught me how to make strawberry shortcake back when I was a kid…and I still make it just like he taught me. I remember sitting at the counter watching him slice strawberries on our white cutting board, anticipating the strawberry shortcake to come later 🙂

You don’t need to add any extra ingredients simply because the strawberries are already delicious as is! I like to add a sprinkle of sugar to encourage the strawberries to make their own sauce as they sit in the fridge. Plus it adds a hint of extra sweetness.

Growing up, we would always serve this on top of angel food cake with lots of whipped cream. I also love it on German Puff Pancake or in a yogurt parfait with crunchy homemade granola!

How to Make this No-Cook Strawberry Compote Recipe

Start by washing and drying your strawberries (use a salad spinner to make this part easy!)

Slice off the leafy tops of the strawberries and thinly slice the berries. I like to slice them vertically, but you can also slice them horizontally if you prefer.

Place the thinly sliced strawberries into a mixing bowl and use a potato masher to mash them 3/4 of the way. You still want some chunks of strawberries in there. Sprinkle a little sugar on top, and stir.

Cover the bowl of strawberries and place in the refrigerator for at least a few hours before serving. I prefer to leave them overnight in the refrigerator for the best flavor and texture. Plus, strawberry compote is delicious cold!

This compote will stay fresh in the refrigerator for about a week.
