Whipped Lemon Honey Butter

Whipped Lemon Honey Butter is super easy to “whip up!” 😉

You may have heard of Whipped Honey Cinnamon Butter (which is delicious spread onto a warm slice of Norwegian Brown Bread!) But for berry-centric baked goods (like my Healthy Blueberry Muffins), try making this easy Whipped Lemon Honey Butter for a sweet, zesty flavor and color contrast!

The beautiful yellow color of the lemon zest in this butter creates a beautiful contrast against fruits in baked goods — especially berries!

Tips

  • Set out the stick of butter a couple of hours before making this so that the butter is easy to whip.
  • When zesting the lemon, use a microplane to zest the yellow part of the peel. Avoid zesting the white pith underneath the yellow peel as the pith can be bitter.
  • Whipped butter must be kept at room temperature to maintain the light whipped texture. But you can also spread the butter into a decorative butter mold and place in the refrigerator to harden if you’d prefer to serve this as a cold butter.

  • 1 stick (8 tbsp) of salted butter, softened at room temperature
  • 2-3 tbsp honey
  • 2 tsp. lemon zest (1 large lemon or 2 small lemons)
  • 1 tsp. fresh lemon juice

How to Make Whipped Lemon Honey Butter

In a mixing bowl, add the softened butter and honey. Use an electric mixer to beat the butter and honey until incorporated and smooth.

Use a zester/microplane grater to zest the yellow lemon peel just until you see the white pith. Avoid zesting the white pith as this part can be bitter.

Add the zest and lemon juice to the butter. Beat on high for 2 minutes to achieve a whipped texture.

Taste to see if you want to add more honey or lemon juice.

Keep the whipped butter at room temperature to maintain the silky whipped texture and serve with yummy breads like my Healthy Blueberry Muffins!
