Bursting with flavor and color, these roasted grape tomatoes are a delicious addition to pastas, flatbreads, paninis, eggs, and more. A simple and delicious tomato side dish that elevates just about any recipe!

Roasted Grape Tomatoes are one of those side dishes that’s so easy to prepare, yet so elegant to serve!
I was inspired to start making roasted grape tomatoes after having them in an angel hair pasta dish at an Italian restaurant back when I was 15. I remember loving how these simple roasted grape tomatoes added pops of incredible flavor and texture (not to mention beautiful color!) to so many recipes.
Depending on how you want to use them, you can roast them with a variety of aromatics and herbs such as garlic, oregano, or saffron.

Tips
- Roast the tomatoes until you see the skins wrinkling and bursting
- I always like to add a pinch or two of sugar to bring out the sweetness of the tomatoes 🙂
- This is the kind of recipe that doesn’t require any measuring, really. I’ve listed the seasonings I use, but you can decide how much salt, pepper, etc. suites your taste!

Ingredients
- 2 lbs. Grape tomatoes (or whatever amount you want to use!)
- cherry tomatoes or other similar-sized tomatoes also work for this recipe.
- Extra virgin olive oil
- sea salt
- freshly cracked black pepper
- dried or fresh oregano
- granulated sugar (optional)
Other optional herbs/aromatics:
- fresh garlic cloves, chopped onions, shallots
- fresh rosemary or thyme
- saffron

You can serve it with so many dishes too. Add these roasted grape tomatoes to an angel hair pasta, or top a flatbread with them. Serve them with eggs and toast…or make a breakfast bruschetta!

My favorite way to enjoy roasted grape tomatoes is with chicken, fish, or beef and a side of rice!

How to Make Roasted Grape Tomatoes
Preheat your oven to 425 degrees F.
Wash your grape tomatoes, and dry them completely.
Spread the grape tomatoes out in a single layer on your baking sheet. Drizzle them with a hearty drizzle of olive oil. Then, season them with sea salt, freshly cracked black pepper, and oregano. I always add a pinch or two of granulated sugar to bring out the sweetness as well.

Use your hands to roll the tomatoes around in the oil and seasonings to evenly coat the tomatoes.
Then, pop them in the oven for 15-20 minutes until the skins are wrinkly and bursting.
Serve simple, flavorful preparation of grape tomatoes with eggs, pastas, or your favorite protein.

Roasted Grape Tomatoes – Simple and Delicious
Ingredients
- 2 lbs. grape tomatoes
- hearty drizzle extra virgin olive oil
- couple pinches sea salt
- couple of freshly cracked black pepper
- 1/2 tsp. dried oregano
- 2 pinches granulated cane sugar
Instructions
- Preheat your oven to 425 degrees F.
- Wash your grape tomatoes and dry them completely. Spread them out in a single layer on your baking sheet.
- Drizzle them with a hearty drizzle of olive oil (no need to measure!).
- Then season them with a few pinches of salt, a few cracks of black pepper, oregano, and a pinch or 2 of sugar (optional). Use your hands to roll the tomatoes around in the oil and seasonings until they are evenly coated.
- Roast them in the oven until the skins are wrinkly and bursting (about 15-20 minutes).
- Serve them with pasta, flatbreads, eggs, avocado toast, and more!
