Roasted Grape Tomatoes - Simple and Delicious

Bursting with flavor and color, these roasted grape tomatoes are a delicious addition to pastas, flatbreads, paninis, eggs, and more. A simple and delicious tomato side dish that elevates just about any recipe!

Ingredients

  • 2 lbs. grape tomatoes
  • hearty drizzle extra virgin olive oil
  • couple pinches sea salt
  • couple of freshly cracked black pepper
  • 1/2 tsp. dried oregano
  • 2 pinches granulated cane sugar

Instructions

  • Preheat your oven to 425 degrees F.
  • Wash your grape tomatoes and dry them completely. Spread them out in a single layer on your baking sheet.
  • Drizzle them with a hearty drizzle of olive oil (no need to measure!).
  • Then season them with a few pinches of salt, a few cracks of black pepper, oregano, and a pinch or 2 of sugar (optional). Use your hands to roll the tomatoes around in the oil and seasonings until they are evenly coated.
  • Roast them in the oven until the skins are wrinkly and bursting (about 15-20 minutes).
  • Serve them with pasta, flatbreads, eggs, avocado toast, and more!
  • Enjoy!
