Preheat your oven to 425 degrees F.
Wash your grape tomatoes and dry them completely. Spread them out in a single layer on your baking sheet.
Drizzle them with a hearty drizzle of olive oil (no need to measure!).
Then season them with a few pinches of salt, a few cracks of black pepper, oregano, and a pinch or 2 of sugar (optional). Use your hands to roll the tomatoes around in the oil and seasonings until they are evenly coated.
Roast them in the oven until the skins are wrinkly and bursting (about 15-20 minutes).
Serve them with pasta, flatbreads, eggs, avocado toast, and more!
