Why You’ll LOVE these Healthy Dark Chocolate Peanut Butter Cups
- SO GOOD! – These healthy chocolate cups are silky smooth and full of rich dark chocolate flavor.
- Pretty Easy – you don’t need to know all the technicalities of working with chocolate to make these chocolate cups. The coconut oil does a lot of the work for you in making the chocolate smooth.
- Totally Customizable – Use the base recipe to make any flavor of healthy chocolate cups that you like!

Tips
- Heat Slowly– Heat the chocolate gradually so that it doesn’t seize up (become stiff and no longer fluid). Use a double boiler setup (or a glass mixing bowl on top of a pot of water) to heat the chocolate mixture in this recipe gently.
- Do not get water in the chocolate – this could also cause the chocolate mixture to seize up.
- Store in the Refrigerator or Freezer – Because these healthy chocolate peanut butter cups are made with coconut oil, they need to be kept cold at all times. Just pull them out of the refrigerator whenever you are ready to enjoy them!
- Sweeten to Taste – This recipe makes a dark chocolate peanut butter cup. Taste the chocolate mixture once it is melted, and if you want it sweeter, just add more maple syrup 🙂

Ingredients
- 3.4 oz. 100% dark chocolate
- 1/4 c. 100% pure maple syrup
- 2 tbsp. almond butter
- 2 tbsp. coconut oil
- 1/2 tsp. pure vanilla extract
- 2 pinches of fine sea salt
- peanut butter of choice
Optional Toppings
- flaked sea salt (optional)
- crushed freeze-dried strawberries (optional)
Kitchen Tools
- mini muffin pan
- mini muffin liners
- double boiler or glass mixing bowl on top of a pot

How to Make Healthy Peanut Butter Cups
First, fill a pot with an inch of water, and heat over medium heat on the stove. Place a glass mixing bowl on top of the pot of water to create a double boiler setup. (Make sure that the water does not touch the bowl).
Place the 100% dark chocolate, coconut oil, almond butter, maple syrup, vanilla extract, and sea salt in the mixing bowl. As the water begins to simmer, you will start to see the coconut oil and chocolate slowly melt. At first, the ingredients will be separated. Once the chocolate melts completely, the mixture will all come together. 🙂

Just make sure to not get any water in the chocolate mixture!
Once the chocolate mixture is completely melted and unified, line your mini muffin pan with paper liners. Fill the mini muffin liners halfway with the chocolate. Then, place a 1/2 tsp dollop of peanut butter in the center of each one. Allow the peanut butter to sink into the chocolate a bit.

Then, cover the peanut butter with more chocolate, filling each muffin liner up to the top.
OPTIONAL: Top each chocolate cup with a sprinkle of flaked sea salt or crushed up freeze-dried strawberries.
Place the mini muffin pan in the freezer or refrigerator to allow the chocolate to cool completely and set.

Store the chocolate peanut butter cups in the refrigerator or freezer at all times. Since these healthy peanut butter cups are made with coconut oil, they can’t be stored at room temperature since they melt very easily.
Enjoy these healthy and delicious dark chocolate peanut butter cups. They are such a treat!
