A seriously easy, bone broth-based chicken broccoli rice casserole that takes 12 minutes in the Instant Pot and is made with 4 clean ingredients + seasonings! Easy, delicious, and satisfying!

There’s something so yummy and soothing about savory rice dishes. Like creamy chicken and rice casserole, cheesy taco rice, etc.
Now that I’m lactose intolerant, I MISS those cozy meals! And now that I’m also more health conscious, I avoid the highly processed canned creamy soups that are often used in said casseroles.
BUT! I’ve discovered that you can make super yummy, somewhat creamy Chicken Broccoli Rice Casserole with bone broth in 12 minutes in the Instant Pot. It’s super fast and my family loves this meal (including my toddler).

My current go-to Instant Pot broth-based “casserole” combos are:
-Creamy chicken & wild rice
-Taco rice (think chicken or ground beef, black beans, tomatoes, green chiles…sometimes corn)
-And then this recipe that I am sharing with you today: Chicken Broccoli Rice Casserole. You can top it with cheese or add a few dashes of soy sauce for more of an Asian flavor (sooo good).

Tips:
The KEY is to use broth instead of water, and to use a lot of it (bone broth if you can!). Typically when cooking rice, the water-to-rice ratio is 2:1. But to get the rice to have that creamyish texture, the broth-to-rice ratio needs to be more like 4:1.
Want to make this SUPER EASY and Super Cheap?? (This is why I LOVE my Instant Pot!)-
- Step 1: Buy a rotisserie chicken. Take all the meat off the carcass.
- Step 2. Use the carcass to make your bone broth.
- Step 3. On the day you want to make this broccoli chicken and rice, your broth and chicken and ready to go and all you need to add is the rice, broccoli, and seasonings.
You can use fresh or frozen broccoli.

Ingredients
- 1 qt. chicken bone broth (I use unsalted, homemade bone broth from my rotisserie chicken carcass)
- bone broth will give you more protein and a richer flavor. I keep all the fat in my broth to add to the creamy texture of this chicken broccoli rice casserole.
- 1 c. dry rice (I use basmati)
- 2 cups cooked chicken, cubed
- 2 cups of broccoli florets (fresh or frozen both work)
- Hearty drizzle extra Virgin Olive Oil
- 1 large bay leaf (or 2 small)
- 3/4 tsp. sea salt
- 1/16th tsp white pepper
- 1/8th tsp onion powder
- 1/8th tsp garlic powder

Ways to Enjoy
Enjoy warm bowls of Chicken Broccoli Rice Casserole straight out of the Instant Pot.
For a casserole style presentation: put the cooked chicken broccoli rice casserole into a 9×13 baking dish and top with shredded cheese. Bake at 375 degrees F. until the cheese is melted and bubbly.

How to Make Chicken Broccoli Rice Casserole
Place the broth, cubed chicken, uncooked rice, and broccoli florets into the Instant Pot insert. Drizzle with a hearty drizzle of EVOO, and add the seasonings: sea salt, white pepper, bay leaf, onion powder, and garlic powder.
Stir everything together.

Lock the lid into place, and select the “Rice” function for 12 minutes.
Once the cooking cycle is complete, release the pressure.
Give it a good stir. Taste test to see if you want to add more of the seasonings (usually you’ll need to add a little more).

Then serve it up and enjoy by itself, with cheese, or with soy sauce!
Optional Extra Step: Spread into a 9×13 casserole dish, top with cheese, and bake at 375 degrees F. until the cheese is bubbly.

Chicken Broccoli Rice Casserole (Broth Based) – Instant Pot Recipe
Equipment
- Instant Pot
Ingredients
- 1 qt. chicken broth/stock I use unsalted
- 1 c. uncooked rice I use basmati
- 2 c. cooked chicken cubed
- 2 c. broccoli florets fresh or frozen
- hearty drizzle Extra Virgin Olive Oil
- 3/4 tsp. sea salt
- 1/16 tsp. white pepper
- 1 lrg. bay leaf or 2 small
- 1/4 tsp. onion powder
- 1/4 tsp. garlic powder
Optional Toppings:
- soy sauce for an asian flavor
- shredded cheese for cheesiness 🙂
Instructions
- Place the chicken broth, rice, chicken, and broccoli florets in the Instant Pot insert. Add the olive oil and seasonings: sea salt, white pepper, bay leaf, onion powder, and garlic powder to the Instant Pot. Stir to combine everything.
- Lock the lid into place. Select the "Rice" function for 12 minutes.
- Once the cooking cycle is over, release the pressure.
- Serve this delicious chicken, broccoli, rice bowl by itself or topped with some soy sauce or shredded cheese. Enjoy!
