Spiced Apple Cider Oatmeal

This spiced apple cider oatmeal smells and tastes like apple cider! It is SO delicious and cozy for the cooler months. Apples and pie spices are simmered together with sprouted oats + a touch of vanilla. Sweeten with your choice of sweetener. I'm so serious...it's like being at an apple orchard -- but in a bowl!

Equipment

Ingredients

  • 2 c rolled oats
  • 4 cups filtered water milk can be used too
  • 2 medium apples chopped
  • 1-2 tsp apple pie spice see below for pie spice recipe
  • 2 tsp. vanilla extract
  • pinch of sea salt
  • 1/4 c. raisins or dried cranberries (optional)

Apple Pie Spice Recipe

  • 1 tsp cinnamon
  • 1/2 tsp. nutmeg
  • 1/2 tsp. ground cloves
  • 1/4 tsp. allspice
  • 1/4 tsp. cardamom

Recommended Toppings

  • butter
  • walnuts or pumpkin seeds
  • brown sugar or maple syrup

Instructions

Stovetop Instructions

  • Chop apples into hearty chunks (leave skins on).
  • Add 4 cups of filtered water to a pot. Stir in the apples, vanilla, apple pie spice, and sea salt. (Add in the raisins or cranberries if desired). Bring to a boil.
  • Once the water is boiling, stir in 2 cups of oats. Stir well to prevent the oats from bubbling over.
  • Turn the heat down to medium-low. Cover with a lid, and simmer for 10 minutes until the oats have thickened.
  • Top each serving with a pat of butter, brown sugar or maple syrup, and walnuts or pumpkin seeds.

Instant Pot Instructions

  • Add the chopped apples, oats, water, apple pie spice, vanilla, and sea salt to the Instant Pot insert. (Add in the raisins or dried cranberries if desired).
  • Lock the lid on. Cook on the "Porridge" function for 5 minutes. Then, release the pressure.
  • Top each serving with the toppings mentioned above!
