No-Cook Strawberry Compote Recipe

This strawberry compote recipe is a juicy, sweet, and delicious topping for pancakes, ice cream, and of course, strawberry shortcake! It's super easy and only requires fresh strawberries and a sprinkle of sugar!

Ingredients

  • 1 pint fresh strawberries thinly sliced
  • 1 tsp granulated cane sugar optional

Instructions

  • Wash and dry your fresh strawberries.
  • Remove the leafy tops and thinly slice the strawberries vertically.
  • Place the sliced strawberries in a bowl and mash them with a potato masher 3/4 of the way until they appear juicy. You still want to leave some chunks of strawberries though.
  • Add a sprinkle of sugar (1 tsp or less), and stir.
  • Cover the bowl of strawberries and refrigerate for at least a few hours (or overnight) before serving.
  • Store in the refrigerator for up to a week.
    Serve as a delicious topping for breakfast recipes and desserts all summer long!
