Add rice and olive oil into pot and heat on the stove over medium heat, stirring occasionally. In the meantime, boil 4 cups of water seperately.
Lightly sautee the rice grains with the olive oil (but avoid browning or burning). When you hear the rice begin to the lightly sizzle, add the boiling water.
Cook the rice over high heat until the water level is just below the rice and you see bubbling. Turn the stove heat to low.
Add in the chopped cilantro, and stir to incorporate. Place a lid on the pot, and let simmer on low heat for 15 minutes.
Once the 15 minutes have elapsed, turn the stove heat off. Add in the fresh lime juice from 1 lime and the sea salt. Stir the ingredients into the rice with a scooping motion to avoid mushing the rice.
Taste the cilantro lime rice and assess if you want to add the second lime or more cilantro or salt.
