Cilantro Lime Rice

Ready for a crowd-pleaser? All you need is some fresh lime juice, cilantro, and sea salt to make that tangy rice that everyone loves in burrito bowls and burritos.

Ingredients

  • 2 c basmati rice
  • 4 c filtered water
  • drizzle extra virgin olive oil
  • 1-2 limes start with 1
  • 1/3 c chopped cilantro stems and leaves
  • 1/4 tsp. sea salt or to taste

Instructions

  • Add rice and olive oil into pot and heat on the stove over medium heat, stirring occasionally. In the meantime, boil 4 cups of water seperately.
  • Lightly sautee the rice grains with the olive oil (but avoid browning or burning). When you hear the rice begin to the lightly sizzle, add the boiling water.
  • Cook the rice over high heat until the water level is just below the rice and you see bubbling. Turn the stove heat to low.
  • Add in the chopped cilantro, and stir to incorporate. Place a lid on the pot, and let simmer on low heat for 15 minutes.
  • Once the 15 minutes have elapsed, turn the stove heat off. Add in the fresh lime juice from 1 lime and the sea salt. Stir the ingredients into the rice with a scooping motion to avoid mushing the rice.
  • Taste the cilantro lime rice and assess if you want to add the second lime or more cilantro or salt.
